I made vegan cheese for my family and my mother commented that it tastes similar to something she knows. We kept thinking about what it is that tastes similar to the cashew cheese but what is it.
It was muhammara or the Lebanese pine nut dip. And boom. I have a recipe to make!
This dip is great to add to sandwiches, to enjoy with pita chips, Middle Eastern pastries, vegan pizza, you know, get creative.
Muhammara (Walnut Dip)
- 1 cup walnuts soaked for 20 mins
- half of a lemon
- 1 tbsp tomato paste
- 1 tbsp of pomegranate molasses (or to taste)
- 1.5 tsp paprika
- 1 tsp dried coriander
- 1/4 tsp sea salt
- chili pepper to taste
- In a food processor mix all the ingredients together until well combined
- I like mine a bit grainy but you can also have it as a smooth spread
