Berry Cherry Compote

I've wanted to make this recipe for at least a year now. I kept putting it off saying that berries taste great as they are! Why mess with them you know?

I was mistaken.

This compote is oh god. So warm, sweet, tart, and takes your breakfast to a whole new level. 

Plus it's super easy to make and can easily be reheated to be added to your breakfast or brunch. 

Get fancy without trying too hard. That's what's up.

Note: If you don't like seedy jams, then don't use raspberries or blackberries.

Berry Cherry Compote

Ingredients

  • 2 cups berries (strawberries and blueberries are great options)
  • 1 cup pitted cherries (or sub for any berry)
  • 2 tsp lime juice
  • 1/2 tsp cinnamon
  • 1 tsp pure vanilla extract
  • 1/4 tsp ginger powder
  • 1 tbsp coconut sugar or any kind of sweetener optional*
  • 1 tbsp cornstarch optional

* Use a sweetener depending on the ripeness and sweetness of your fruits. I didn't need any.

Steps

  1. Wash your fruits first
  2. Heat a medium saucepan over medium heat
  3. Mix the fruits together and add the lime juice, cinnamon, ginger, and sweetener if using
  4. When it simmers, lower the heat and let it cook for 15 minutes or so
  5. Mash the fruits as you go and mix occasionally
  6. Until it reaches the consistency you desire
  7. If you want your compote to be thick kinda like jam then you can mix one tbsp of cornstarch with two tbsps or cold water in a separate bowl!
  8. Then add the cornstarch mixture to the pot and keep mixing until it thickens up
  9. Serve immediately with pancakes, crêpes, waffles, oatmeal, and the list keeps going
  10. Store in an air-tight container in the fridge.
