Tahini Ice Cream Bars
This is one of the recipes that I want everyone to make at least once in their lives! The process of making it is exciting and the taste is beyond rewarding. If you're a lover of tahini or "halva" then I'm sure you'll love this recipe! If you don't like chocolate, feel free to omit it from the recipe.

Tahini Ice Cream Bars
Ingredients
Base
- 2 cups almonds
- 1 cup pecans
- 1 cup dates
- Dash of sea salt
Filling
- 1 cup dates
- 1 cup cashew milk
- 1/2 cup tahini
- Dash of cinnamon
- Dash of salt
Toppings
- Pistachio, pecans, mulberries (highly recommended), almonds, or cacao nibs
Chocolate
- 4-6 squares of vegan dark vegan chocolate
- OR 2 tbsp cacao powder + 2 cacao butter/coconut oil + maple syrup or date syrup to taste
Steps
- Mix the almonds and pecans until well chopped then add the dates
- Mix until it forms a sticky dough
- Press into a loose bottom pan then to the freezer while you make the filling
- Mix all the filling ingredients until smooth
- Spread the filling evenly over the base and freeze for 30 mins or more
- Meanwhile, prepare your toppings and chocolate by melting the cacao butter or coconut oil in a double boiler until melted then remove from the heat and add the cacao and sweetener
- Remove the bars from the freezer and warm your knife in warm water then slice your cake into bars
- Top with your favorite toppings then drizzle the chocolate over them and watch the chocolate becomes solid in a few seconds
