Ginger Cookies / Bliss balls

These cookies are gooey from the inside and crunchy from the outside. Super good with a warm cup of chai or golden mylk! 

They are gluten free and naturally sweetened, you can keep them raw by simply skipping the baking part and rolling them into bliss balls instead!

Ginger Cookies / Bliss balls

Ingredients

  • 2 cups soft dates
  • 1 cup buckwheat flour / or 2 cups of rolled oats
  • 1/2 cup almond butter
  • 1 tsp ginger powder
  • 1/2 tbsp cinnamon
  • 1/4 cup dried cranberries optional

Steps

  1. If your dates are a bit dry, soak them in hot water, then discard the water
  2. Blend in a food processor until it forms a sticky dough
  3. Form into cookie shaped goodies 
  4. Preheat the oven to 350 and bake for 15 minutes. Let them cool (they'll harden as they cool)
  5. If you want to keep things simple, you can enjoy them raw and just roll them into bliss balls and store in the freezer

*Feel free to add cacao powder to these goodies, ain't nothing wrong with that.
