Carrot Cake Oatmeal
This has been my favorite breakfast the past few days! the carrots make it filling and ah it gives your hearts a big hug in the morning that warms your insides and keeps you relaxed.
It's quick and easy. I used steel-cut oats because I find them more filling and I like the creamy texture. However, feel free to replace them with old fashion oats or any other grain that you have on hand.
Carrot Cake Oatmeal
Ingredients
- 1/2 cup steel-cut oats (or 1 cup old fashion oats)
- 2 cups water
- 1 cup shredded carrots - about 1 medium carrot
- 1/2 tsp cinnamon
- 1/4-1/2 tsp ginger powder
- sweetener of choice /1 tbsp date molasses would go well*
*I found it unnecessary to add a sweetener, but that'll depend on your carrots and taste.
Steps
- Soak the steel-cut oats for 20 minutes or overnight (optional) then drain
- Add water then cook on low heat
- Add the spices
- Ad the carrots whenever you feel like it. At the beginning, if you like your carrots creamier or after you turn off the heat if you want them a little crunchy
- Cook until all the liquid is absorbed
- Taste and add your sweetener accordingly
- Toppings: Tahini, pepitas, pecans, and cacao nibs
