Bold Pineapple Salad

This is a salad the kind of salad you will crave and enjoy while eating! As you might know, I'm not a salad person. But if all salads are like this one, then heck yes I am! And that's what I've been trying to do lately. Make salads interesting and enjoyable. Gotta get those greens in!


Bold Pineapple Salad



  • 1 small pineapple
  • 2 cups arugula 
  • 1 small beet shredded - optional


  • 1 tbsp Wize Bold Cashew Butter (sub for cashew butter or almond butter) 
  • 1/2 tsp sumac
  • black pepper to taste
  • 1/2 tbsp balsamic vinegar
  • 1/2 lemon
  • Chili flakes to taste


  1. Heat a large skillet on medium heat
  2. Slice the pineapples thinly then add to the pan
  3. Cook on each side for 3-5 minutes or until the juices are released and the pineapple is soft
  4. In a small bowl, mix all sauce ingredients together
  5. Taste and adjust to your liking
  6. Add the arugula to a bowl and cover with the sauce add shredded beets if desired and the pineapple
