Bold Pineapple Salad
This is a salad the kind of salad you will crave and enjoy while eating! As you might know, I'm not a salad person. But if all salads are like this one, then heck yes I am! And that's what I've been trying to do lately. Make salads interesting and enjoyable. Gotta get those greens in!
Bold Pineapple Salad
Ingredients
Salad
- 1 small pineapple
- 2 cups arugula
- 1 small beet shredded - optional
Sauce
- 1 tbsp Wize Bold Cashew Butter (sub for cashew butter or almond butter)
- 1/2 tsp sumac
- black pepper to taste
- 1/2 tbsp balsamic vinegar
- 1/2 lemon
- Chili flakes to taste
Steps
- Heat a large skillet on medium heat
- Slice the pineapples thinly then add to the pan
- Cook on each side for 3-5 minutes or until the juices are released and the pineapple is soft
- In a small bowl, mix all sauce ingredients together
- Taste and adjust to your liking
- Add the arugula to a bowl and cover with the sauce add shredded beets if desired and the pineapple
