Pomegranate Bulgur Salad
This recipe has the best of Armenian Salad and a Mujaddarah. It's so good. My favorite lunch these days. Best part? It's so easy to make.
Pomegranate Bulgur Salad
Ingredients
- 1/2 cup bulgur
- 1/2 cup brown lentils
- 2 tbsp pomegranate molasses
- 1-2 tbsp tomato paste
- 1 lemon
- salt and pepper to taste
- 1 tsp paprika, smoked paprika, and onion powder
- 1/3 cup chopped parsley (sub with coriander)
- 1 tbsp apple cider vinegar
- 1-2 tbsp finely chopped mint
- Optional: 1/4 cup chickpeas
Steps
- Wash and rinse the bulgur and lentils
- Add to a small saucepan and cover with ~2 cups of water
- Bring to a boil then let it simmer on low heat - covered
- Cook until all the water has been absorbed. About 20 minutes
- Add all the remaining ingredients and mix well
- Taste and adjust to your liking
- Can be served hot or cold
