Pomegranate Bulgur Salad

This recipe has the best of Armenian Salad and a Mujaddarah. It's so good. My favorite lunch these days. Best part? It's so easy to make.

Pomegranate Bulgur Salad

Ingredients

  • 1/2 cup bulgur
  • 1/2 cup brown lentils
  • 2 tbsp pomegranate molasses
  • 1-2 tbsp tomato paste
  • 1 lemon
  • salt and pepper to taste
  • 1 tsp paprika, smoked paprika, and onion powder
  • 1/3 cup chopped parsley (sub with coriander)
  • 1 tbsp apple cider vinegar
  • 1-2 tbsp finely chopped mint 
  • Optional: 1/4 cup chickpeas 

Steps

  1. Wash and rinse the bulgur and lentils
  2. Add to a small saucepan and cover with ~2 cups of water
  3. Bring to a boil then let it simmer on low heat - covered
  4. Cook until all the water has been absorbed. About 20 minutes
  5. Add all the remaining ingredients and mix well
  6. Taste and adjust to your liking
  7. Can be served hot or cold
