Armenian Salad // Itch (Eetch)
This salad. I cannot explain. It's hands down my all time favorite salad. I tried it first in a couple of Armenian restaurants here in Riyadh and I fell in love. IT'S SO GOOD! The perfect combination of sweet, acidic, and sour.
It's easy to make in small or very large batches. It's delicious and filling. Best part? It's equally yummy when it's served cold or hot. Which makes it a perfect option to take to work or school.

Ingredients
- 1 cup bulgur (medium grind or fine)
- 1 small red onion finely diced
- 3 garlic cloves minced
- 1 medium tomato finely chopped
- 2-3 tbsp tomato paste
- salt and pepper to taste
- 1/4 tsp onion and garlic powder
- 1 tsp sweet paprika
- cayenne pepper to taste
- a hint of ginger powder
- 1 tbsp apple cider vinegar
- 1 tbsp pomegranate molasses
- lemon
- ~1/2 cup of chopped parsley
- 1/4 cup of pomegranate seeds
- Mint leaves
Steps
- Wash then soak the bulgur in water and set aside
- Meanwhile, saute the onion until it wilts then add the garlic until it's golden
- Add the spices
- Add the tomatoes and tomato paste and saute for 3 minutes or so
- Remove the excess water from the bulgur then add it to the pan
- Add 1/2 cup of water and close the lid
- Cook for 10-15 minutes or until all of the water is absorbed and the bulgur is soft
- Remove it from the stovetop and add the vinegar, pom molasses, lemon juice, parsley, and pomegranate seeds
- Taste and adjust to your liking
- Serve hot or cold
