Chickpea Butternut Squash Boats
This is one of my favorite savory dishes to make. It's easy, quick, and so satisfying. I get so full after eating this meal even if I was very hungry.
It's an easy lunch or dinner idea when you are tight on time and want something satisfying and requires minimal efforts. You can easily take this to work and reheat it or enjoy it cold.
Chickpea Butternut Squash Boats
Ingredients
- 1 medium squash cut in half, insides scooped out
- 1 cup cooked chickpeas
- 1 tsp paprika
- 1/2 tsp thyme (fresh or dry)
- 1/2 tsp cumin powder
- pinch of onion powder
- pinch of garlic powder
- cayenne pepper to taste
- salt and pepper to taste
Steps
- Preheat the oven to 350F (175C)
- Cut the squash in half and remove the inner flesh and seeds
- Sprinkle with thyme, paprika, salt and pepper
- Place on a nonstick surface, squash flesh facing down (cut side down)
- Bake for 30 minutes or until you can easily insert a fork through it
- Meanwhile, reheat the chickpeas with some water or the chickpea water (aquafaba)
- Add onion and garlic powder, cumin, paprika, cayenne, salt and pepper
- Add the chickpeas to the insides of the squash
- Sprinkle with some thyme
- Enjoy hot or cold (perfect to take to work)
