Cinnamon Lemon Oatmeal
This oatmeal is inspired by Poleás . It’s so cozy, yet the lemon zest gives it that freshness that you crave when it’s starting to get a little warmer but it’s still cold in the morning.
1 cup rolled oats or 1/2 cut steel cut oats
1 lemon zest
1/2 tsp vanilla
1/8 tsp anise seeds
1 cup mashed pumpkin - optional
Maple syrup or sweetener of choice - optional
Cook your oats in double the amount of water or more if you like your oatmeal creamier
so if using one cup of rolled oats, two cups of water. If using 1/2 cup steel cut oats, then use 1 cup of water
Add the remaining ingredients and cook until all the water has been absorbed.
Enjoy with your favorite toppings.
I topped mine with homemade vegan yogurt, cacao nibs, dried cranberries, and almond butter
*If you’re using steel cut oats, soak them a few hours before in warm water.
