Vegan Basbosa // Semolina Cake

I'm going to be honest with you and tell you that this basboosa recipe isn't as good as your regular, dripping with oil and sugar syrup basboosa. However, it's still pretty damn good. Especially for the fact that it's refined sugar-free and oil-free.
Vegan Sambosa // Semonila Cake
Ingredients
- 3 cups semolina flour
- 1.5 cups soy milk (or any plant mylk)
- 1/2 tbsp apple cider
- 1/2 cup coconut sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- pinch of turmeric
- 2 tbsp tahini divided
- maple syrup for serving
- shredded almond for decorating
Steps
- Preheat the oven to 350F (175C)
- In a large bowl, whisk the soy milk with the vinegar to create buttermilk
- In a different bowl, mix the dry ingredients together
- Mix the tahini with the soy milk, add the wet to the dry
- Grease a rectangular glass bakeware with 1 tbsp of tahini
- The batter will be very thick، spread it evenly on your bakeware
- spread shredded almonds on top or whole almonds
- Bake for 40 minutes or until golden
- *You can broil for a few minutes to give it that golden layer
