Authentic Hummus
Finally. After two years of constant trials and extensive research, I have found the secret to authentic middle eastern restaurant hummus. I am overjoyed. I cannot express to you how happy and accomplished I feel.

Authentic Hummus
Ingredients
- 2 cups dry chickpeas
- 3 bay leaves
- 1 tsp baking soda
- 1/4 cup tahini
- salt to taste
- juice of one large lemon
- 3/4 cup of ice!
Steps
Chickpeas
- Soak the chickpeas for 24 hrs changing the water at least twice
- Wash and drain the chickpeas
- Cover with fresh water (3 inches over) add the bay leaves and baking soda
- Bring to a boil, lower the heat and cover
- Cook for one hour or until the chickpeas become very soft and easy to mush
Hummus
- Let the chickpeas cool completely
- Blend the chickpeas with all the ingredients until very smooth
- Taste and adjust to your liking
- Garnish with extra chickpeas and paprika or cumin
*For best results, wait until the next day and watch the video below for the best techniques
Storing:
To store the leftover chickpeas, drain all the water (you could save it and use it for cooking/baking) and store in the fridge for 3-5 days or in the freezer for a year
Hummus will stay good in the fridge for 3-5 days (sometimes even a week, but it wouldn't stay for that long anyway)
