Easy Healthy Mashed Cauliflower

I've wanted to make mashed cauliflower for a very long time, but I kept putting it off because I thought it'll take a long ass time to make. This morning I found this simple recipe at Whole Foods. It's simple with a light taste, and texture. It's easy to play around with it, and add different flavors or try adding different types of cheese. If you're used to buttery mashed potatoes, don't worry you'll still like these. I read some reviews saying that their relatives/friends didn't even know that it is cauliflower!

Ingredients:

  • 1 head of cauliflower
  • 1 Tbsp of extra virgin olive oil
  • Pinch of Sea Salt
  • Black pepper to taste
  • Optional: Garlic, cottage cheese.

Directions:

Boil a large pot of salted water, then add the chopped cauliflower. Boil until tender, for about 12 minutes. Reserve 1/3 cup of the cauliflower water, drain the rest very well. Add the water, cauliflower, and olive oil to your food processor, and purée until it's smooth. Add more oil or water if needed.

Mince some garlic and mix it in or add garlic powder. Top with cottage cheese for extra protein.

When I heated up the left overs, the first time I minced some garlic and mixed it in before heating it up. The second time, topped it with cottage cheese after heating it up. You can add your favorite cheese and let it melt on top of the cauliflower.
