Rich Cacao Parfait
I love parfaits. They keep things interesting. And, for an indecisive bitch like me, it means that I don't have to decide. I can have everything in one big jar. How wonderful.
This recipe only takes a few minutes to prepare and you will have it ready in the morning. All you need to do is layer them and if you want to take things to the next level, then make some nice cream!
*Make this recipe portable by omitting the nice cream and doubling the cacao cream or replacing it with fruits. It'll still be good!
Rich Cacao Parfait
Ingredients:
Oats
- 1/2 cup rolled oats
- 2 tbsp buckwheat groats
- 1 cup coconut+rice milk or any plant milk
- cacao nibs
Cacao cream
- 1/2 cup coconut cream/milk (canned)
- 1 tbsp cacao powder
- 1/2 tsp coconut sugar (more to taste)
- +3 chopped dates
- 1/2 tsp tahini
Strawberry nice cream
- 300g frozen ripe bananas
- 70g frozen strawberries
- 1 tbsp of water or plant milk
Toppings
- coconut chips, vegan chocolate chips, and goji berries
Method
- The night before or a few hours ahead start making the oats and coconut cream
- In a mason jar start mixing the oats, buckwheat groats, cacao nibs, and milk very well. Close the jar and leave it in the fridge
- In a separate jar add the coconut cream and cacao and mix. Add the remaining ingredients and mix. Close the jar and leave it in the fridge
