Coconut Sweet Potato Oats

I came back from Dubai a few days ago and now I'll be traveling again in a few days for a longer period of time. For someone like me who cooks all of their meals, this means it's time to empty the fridge and the pantry. Which led me to create this delicious and easy recipe.

Sometimes being limited pushes you to be more creative. My situation in the kitchen is a simple example of that. But we see that happening all the time on a larger scale. I notice it all the time in countries with limited creative freedom. I think that's when you see shit that makes you feel something inside.

Anyway, that probably didn't make a lot of sense to you, but I don't really feel like explaining myself right now. What I feel like doing is describing how fucking good this recipe turned out to be. I made it several times, tweaking it a bit each time until I came to the simplest method that turned out to be the most delicious.

The hardest part of this recipe is boiling the sweet potatoes. Ugh, I know.

Boil the potato, mash it, add the oats and the coconut milk. Add whatever toppings you wish (cacao nibs!!) or if you feel like being fancy;  layer it with some cacao pudding and coconut rawnola

Coconut Sweet Potato Oats 

Ingredients:

  • 1 medium/large sweet potato boiled
  • 1 cup rolled oats
  • 1.25 cup coconut milk
  • cinnamon
  • 1-2 tbsp maple syrup optional

Steps:

  1. Mash the potato with the skin!
  2. Sprinkle some cinnamon
  3. Add the oats then top with the coconut milk
  4. Mix. mix, mix!
  5. Either enjoy right away or store in the fridge for 8 hours for it to thicken
  6. I layered mine with cacao tofu pudding
