Vegan Belgium Waffles/ Waffle Cereal!


Waffles are risky business, but they're worth it when they succeed. With that said, I would like to introduce you to a solution for when your waffles don't succeed. Specifically, when they don't come out looking perfect, instead crumbled and broken.


I'll be honest with you and tell you that coming up with a plant-based Belgium waffle recipe was challenging (no oil, refined ingredients, or animal products). They stuck to the iron more times than I'd like to admit. That doesn't mean they didn't taste great; no, they just didn't look perfect. So somehow I came up with waffle cereal! Two of my favorite things in one bowl. Oh heck yeah!


Crumble your waffles, add cacao nibs, sliced bananas, berries, and pour some sexy almond milk.


These waffles are basic. Not sweet or savory, so you can be really creative with them. For me, they were perfect the way they were with some toppings, but my friend thought they were not sweet and can be served sweet or savory.

Plant-Based Belgium Waffles



  • 2 cups sprouted spelt flour (sub for regular spelt or whole grain)
  • 2 tsp baking powder


  • 1.5 cups soy milk
  • 1 tsp vinegar
  • 1 ripe banana
  • 1 tbsp maple syrup.


  1. Have two separate bowls ready for dry and wet ingredients
  2. Whisk the soy milk with the vinegar until it turns to "buttermilk"
  3. Mash the banana very well and mix it in and add the maple syrup
  4. Sift the flour and mix it with the baking powder
  5. Slowly add the wet ingredients to the dry
  6. Heat your waffle iron while your batter thickens up more (wait for about 10 minutes!)
  7. Closely add the batter to your waffle iron and let it bake according to you machine's instructions.
  8. I used about 1 cup of batter and let it cook for about 7 minutes
  9. Heat your oven to 200F and let the waffles stay warm in the oven while you make the others. I'll also let your waffles crispier.
  10. You can store your waffles in the freezer and then just heat them up for 10 minutes in 350F.

*In order for them not to stick, use a non-stick waffle iron, remove them slowly from all the sides, and some say that waiting for the machine to cool a bit helps.
