Berry Mint Parfait

This parfait is perfect as a post-workout. It's full of protein, complex carbs, and healthy fats! It was so refreshing and sweet, with a little tang to it. IMG_9867 IMG_9868

There were a bunch of stuff in this smoothie, but honestly all I could taste was the mint and berries.

Needed

Smoothie Layer:

  • 1/2-1 cup frozen mixed berries or just raspberries
  • 2 frozen very ripe banana diced
  • pure vanilla extract
  • Pure stevia or sweetener of choice
  • oh yeah, I almost forgot,  frozen spinach! Can't even tell it was there.
  • fresh mint leaves
  • optional 450 grams soft tofu

Chia Layer:

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • cinnamon
  • pure vanilla extract
  • stevia or sweetener of choice
  • chocolate protein powder optional 

Direction

Smoothie:

  1. add everything in the food processor/blender
  2. Since this smoothie doesn't contain any milk or liquids, it will take a while in the blender. So be patient and keep increasing the power until it reaches the consistency you desire.
  3. You might need to stop the blender and poke around with your spoon to mix things up better.

Chia Pudding:

  1. add everything in an airtight container or jar, except for the protein powder if you're using whey
  2. shake very well
  3. leave in the fridge for 8 hours.
  4. add the protein powder, you might need to mix in more milk or water.
  5. then start layering!

Toppings:

  • Raw chocolate square (see picture above)
  • goji berries
  • raw walnuts
  • cocoa nibs
  • mint leaves for garnish

*for this parfait, I only used about 1/3 of the chia pudding and saved the rest for another day.
