Berry Mint Parfait
This parfait is perfect as a post-workout. It's full of protein, complex carbs, and healthy fats! It was so refreshing and sweet, with a little tang to it.
There were a bunch of stuff in this smoothie, but honestly all I could taste was the mint and berries.
Needed
Smoothie Layer:
- 1/2-1 cup frozen mixed berries or just raspberries
- 2 frozen very ripe banana diced
- pure vanilla extract
- Pure stevia or sweetener of choice
- oh yeah, I almost forgot, frozen spinach! Can't even tell it was there.
- fresh mint leaves
- optional 450 grams soft tofu
Chia Layer:
- 1/4 cup chia seeds
- 1 cup almond milk
- cinnamon
- pure vanilla extract
- stevia or sweetener of choice
- chocolate protein powder optional
Direction
Smoothie:
- add everything in the food processor/blender
- Since this smoothie doesn't contain any milk or liquids, it will take a while in the blender. So be patient and keep increasing the power until it reaches the consistency you desire.
- You might need to stop the blender and poke around with your spoon to mix things up better.
Chia Pudding:
- add everything in an airtight container or jar, except for the protein powder if you're using whey
- shake very well
- leave in the fridge for 8 hours.
- add the protein powder, you might need to mix in more milk or water.
- then start layering!
Toppings:
- Raw chocolate square (see picture above)
- goji berries
- raw walnuts
- cocoa nibs
- mint leaves for garnish
*for this parfait, I only used about 1/3 of the chia pudding and saved the rest for another day.
