7 Easy Vegan Sandwiches Ideas
1. Eggplant Wrap
Ingredients
- 2 medium eggplants
- 1 ripe tomato
- 1 tsp of dijon mustard
- Spices: salt, pepper, onion powder, and cayenne pepper
- Your choice of greens optional
- Whole wheat pita bread or Lebanese bread or whole wheat baguette
Steps
- Preheat the oven to 350F (175c)
- Cut the eggplants in half and season
- Slice the tomato into thick slices
- Place the eggplants facing down and the skin facing up and cook for 50-55 minutes to until very and I mean VERY soft and juicy.
- DO NOT UNDERCOOK THE EGGPLANTS! Thanks.
- When 15 mins are left for the eggplants, add the tomato and cook it.
- Spread some mustard on and then line your vegetables.
- Enjoy warm or cold.
2. Hummus & Roasted Veggies
Ingredients
- 4 tbsp of hummus
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- a handful of roasted cauliflower
- pepper and paprika to taste
- 1-2 large slices or sourdough bread
Steps
- Toast your bread in a toaster or on the stovetop on low heat
- Spread the hummus on
- Top with your roasted vegetables
3. Fresh Rosemary Olive Sandwich
Ingredients
- 2 tbsp spicy rosemary olive spread
- 1 Persian cucumber sliced
- Fresh rosemary to garnish
- Pepper to taste
- 1-2 slices of sourdough
Steps
- Toast your bread
- Spread the olive spread
- Top with the cucumbers and garnish
- Enjoy warm or cold

Ingredients
- 2 tbsp organic peanut butter
- 1 tbsp cacao hazelnut spread
- dash of sea salt
- 1 small ripe banana slices
- 1/2 tbsp raw pumpkin seeds
- dash of cinnamon
- raspberries or pom seeds if available
- 1-2 slices of sourdough bread
Steps
- Toast your bread
- Spread PB then cacao spread
