Dark Chocolate Banana Bread

Fall is here. And I cannot be more excited.

I love summer, don't get me wrong. Except in Riyadh, Saudi Arabia. It's dry, the door handle will give a second-degree burn. The car is hot unless you have a fancy car with a fancy air conditioner. Best part? There isn't even a beach to pay off the struggles of the summer heat. I'm lucky to have a pool. However, I try not to swim in it as it's highly chlorinated and it dries up my skin. 

OKAY! Enough complaining. It was actually not that bad and it went by so fast. Leafy greens went bad quickly and bananas ripened weirdly. However, I'm trying to think of good things to say about summer here... Traffic is for sure less and mmmm you can get tanned in ten minutes, what else what else, well let's just say the heat humbles you.

Dark Choc Banana Bread

Ingredients

  • 3 cups whole wheat flour
  • 1/4 cup raw cacao powder // or use 2 tbsp of cocoa powder
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp rolled oats blended with 1/2 cup of water and separated from the pulp or 1/2 cup plant mylk
  • 1/4 cup water*
  • 1/4 cup tahini
  • 1/4 cup maple syrup
  • 4 nanas mashes ~ 2 cups mashed
  • Cinnamon optional
  • Vegan baking chocolate optional

Steps

  1. Preheat the oven to 350F (175C)
  2. Prepare two mixing bowls. One for dry ingredients and one for wet
  3. For the dry ingredients: mix the flour, baking powder, cacao powder, and cinnamon if using
  4. For the wet ingredients: mash the bananas well then add the mylk, maple syrup, and tahini and mix very well
  5. Mix the wet ingredients into the dry until you get a thick but wet dough. If you need more liquid, add a little bit of water at a time
  6. Don't over mix and use a spatula when mixing the wet with the dry
  7. When the dough is mixed, add the shaved chocolate or any other toppings you'd like
  8. Pour into a nonstick bread pan
  9. Bake for 40-60 minutes. Check with a knife to see if the middle is fully baked.
  10. Enjoy with cashew butter, peanut butter, almond cream or this natural caramel!
  11. You can also double the chocolate and double the fun with this cacao cream

*This bread might be too bitter for some (which I personally love). To balance the flavors, top it with a sweet cream or sauce. Like tahini, date syrup, and cacao or anything you like!
