Raw Coconut Cream Squares

IMG_2496 Many people might feel sorry for me because I don't eat candy bars anymore. Snickers, Mars, Galaxy, you name it. I honestly don't remember the last time I had any of them, and can't imagine eating them again. Instead, I try to always have a healthy treat in the freezer/fridge to satisfy my sweet tooth every now and then, actually more like every day.

With these squares, you can "Treat yo self" without spiking your blood sugar and filling your body with artificial flavors and preservatives making you feel like shit afterwards.

I made these for my friend's birthday surprise and gifted her a couple of  plants because plants rule. So here's an idea for the holidays if you're trying to get everyone on your list. Plants are the perfect gift for anyone! Well, except maybe that uncle who's a frequent flier and barley stays home. Oh and please write them sweet letters. I don't get the point of giving someone something without a card. Cards come first.

Raw Coconut Cream Squares

Ingredients:

Base:

  • 2 cups sprouted almonds
  • 1 cup rolled oats
  • 3/4 cup sunflower kernels (sub for more almonds or walnuts)
  • 1/2 cup shredded coconut
  • 7 pitted sukkari dates
  • 1/4 cup maple syrup

Cream:

  • 2 cups cashews soaked for +4 hrs and drained
  • 1/2 cup coconut cream (the thick top part of the can)
  • 2 tbsp almond butter
  • +2 tbsp rice malt syrup or agave
  • 1/4 tsp vanilla extract
  • dash of cinnamon optional

Steps:

  1. Have a square glass bakeware or a baking tin ready
  2. In a food processor or a Vitamix, process the base ingredients
  3. When a sticky dough-like consistency is formed (might take a few minutes if you're using a simple food processor)
  4. Press into the bakeware with a spoon to form a flat even surface
  5. Stick in the freezer while you prepare the cream
  6. Process all the cream ingredients, top on the base, even out, and make a crazy design if you want
  7. Top with cacao nibs and buckinis. Freeze for +2 hrs.
  8. Allow a few minutes for them to soften. Cut into squares, rectangles, or whatever you want.
  9. Store in the freezer
