Breakfast Sweet Potatoes

Sweet potatoes are one of the cheapest and healthiest foods you can get your hands on almost anywhere in the world and year-round!

They're so healthy that no matter how you cook them (except for deep frying), they'll still be so good for you! So prepare them however you like, but if you don't mind either way then the best way to prepare sweet potatoes is to boil them!

boiling sweet potatoes retains most of its antioxidants while giving less of a blood sugar spike. Eating sweet potatoes raw is the best way to have all the vitamins and antioxidants, but our bodies might not be able to absorb all of it when it's raw. Besides, how many raw sweet potatoes can you eat compared to boiled.

NOTE: Please keep the skin on!!! the skin has about 10 times more nutrients than the flesh. 

One of my favorite ways to eat sweet potatoes is to have them for breakfast! It's so easy and quick. Just boil your sweet potatoes in the morning while you get ready, then come back and prep the toppings you want to use. That's it.

To super power this recipe, I included a variety of toppings that you can choose from. Pick whichever you like and have on hand.

Breakfast Sweet Potatoes

Ingredients

  • 2-4 sweet potatoes

Toppings

  • 2 tbsp crunchy almond butter
  • cacao nibs
  • coconut chips
  • dehydrated cranberries
  • ground flaxseeds
  • cinnamon
  • mulberries
  • goji berries
  • tahini 

Method

  1. Boil some water in a large pot
  2. Add the sweet potatoes and make sure they're covered with the water
  3. Cook for 10-15 minutes depending on how big your sweet potatoes are.
  4. Use a knife to make sure they are cooked all the way through
  5. Remove from the water and cut in half
  6. Top with the toppings mentioned above
  7. Drizzle some almond butter or tahini and enjoy!

Note: You can also keep the leftover sweet potatoes in the fridge and eat them cold the next day! So good either way.
