7 Easy Vegan Sandwiches Ideas

1. Eggplant Wrap

Ingredients

  • 2 medium eggplants
  • 1 ripe tomato
  • 1 tsp of dijon mustard
  • Spices: salt, pepper, onion powder, and cayenne pepper
  • Your choice of greens optional
  • Whole wheat pita bread or Lebanese bread or whole wheat baguette

Steps

  1. Preheat the oven to 350F (175c)
  2. Cut the eggplants in half and season
  3. Slice the tomato into thick slices
  4. Place the eggplants facing down and the skin facing up and cook for 50-55 minutes to until very and I mean VERY soft and juicy.
  5. DO NOT UNDERCOOK THE EGGPLANTS! Thanks. 
  6. When 15 mins are left for the eggplants, add the tomato and cook it.
  7. Spread some mustard on and then line your vegetables.
  8. Enjoy warm or cold.

2. Hummus & Roasted Veggies

Ingredients

  • 4 tbsp of hummus
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • a handful of roasted cauliflower
  • pepper and paprika to taste
  • 1-2 large slices or sourdough bread

Steps

  1. Toast your bread in a toaster or on the stovetop on low heat
  2. Spread the hummus on 
  3. Top with your roasted vegetables

3. Fresh Rosemary Olive Sandwich

Ingredients

  • 2 tbsp spicy rosemary olive spread
  • 1 Persian cucumber sliced 
  • Fresh rosemary to garnish
  • Pepper to taste
  • 1-2 slices of sourdough 

Steps

  1. Toast your bread 
  2. Spread the olive spread
  3. Top with the cucumbers and garnish 
  4. Enjoy warm or cold

4. Ultimate PB & Chocolate Sandwich

Ingredients

  • 2 tbsp organic peanut butter
  • 1 tbsp cacao hazelnut spread
  • dash of sea salt
  • 1 small ripe banana slices
  • 1/2 tbsp raw pumpkin seeds
  • dash of cinnamon
  • raspberries or pom seeds if available
  • 1-2 slices of sourdough bread

Steps

  1. Toast your bread
  2. Spread PB then cacao spread
  3. Top your banana (if you want to take this to the next step, caramelize your banana)
  4. Add the remaining toppings and sprinkle with some sea salt

5. Nutty & Sour

Ingredients

  • 1/2 green apple sliced thinly
  • 2 tbsp cashew or almond butter
  • 1 tbsp chopped almonds
  • 1 tsp shredded coconut
  • 1 slice of sourdough

Steps

  1. Toast your bread
  2. Spread with cashew or almond butter
  3. Top with the apples then sprinkle the remaining ingredients 

6. Tahini Date Sandwich

Ingredients

  • 2 tbsp of tahini
  • 3-5 pitted Sukkari or Medjool dates
  • dash of cinnamon
  • 1 tsp raw cacao nibs
  • Whole grain pita bread or sourdough

Steps

  1. Warm your bread
  2. Spread tahini and top with the dates
  3. Sprinkle cinnamon and cacao nibs
  4. Enjoy warm
