Raw Granola Bars

IMG_1401 4IMG_1391 4 I recently got a dehydrator, and oh wow, it's amazing! There's something fun about waiting for your food to be ready and checking it every now and then. Maybe 'fun' isn't the right word. I don't know, but there's some kind of excitement in waiting for hours for your nuts, granola, fruits or whatever and hoping they turn out well. It's different than what we're used to nowadays, it makes you patient and reminds you that good things come with time. Okay, it's just a dehydrator, I know. But, if you're thinking about getting one, go for it. Plus, it'll save you money in the long run.

Recipe

Ingredients:

Bars:

  • 1.5 cups old fashioned oats
  • 1 cup sprouted almonds (soak them for 8hrs then dehydrate on 110F for +8hrs)
  • 1 cup sunflower kernels
  • 9 Ajwa or any large dates (soaked in filtered water for 20 mins)
  • 2 tbsp walnut butter (or any nut/seed butter + maple syrup)
  • sea salt
  • tiny dash of cinnamon

Chocolate (optional)

  • 1 tbsp raw cacao powder
  • 1 tbsp coconut oil
  • maple syrup to taste (1 tsp)
  • dash of sea salt
  • vanilla extract

Steps:

  1. Add all the dry ingredients in a food processor and process
  2. Add the rest of the ingredients and process until it forms a dough
  3. Shape them in any way you desire, and place on a dehydrator sheet or parchment paper on a baking tin if you're not using a dehydrator
  4. Dehydrate on 105-110F for  6hrs more or less depending on how moist you like them. If not using a dehydrator: place in the freezer for +3 hrs and let them warm up before eating for 10-15 minutes.
  5. For the chocolate, mix everything together and top your granola bars in the desired way (you can make strikes, cover the top, dip completley, or make smiley faces and hearts if you're feelin cute today) then place in the freezer for a few minutes.

*Store in an airtight container in the fridge.
