Dark Cherry & Chocolate Chia

I've always thought that layering is a pain in the ass, I was wrong. It's fun and easy, especially when you make the first layer the night before. I enjoyed making this two layered, parfait? I'm not sure what to call it, but it's delicious and pretty. IMG_9218 IMG_9226

Chia seeds are incredibly healthy, and when made into a pudding, they become a healthy and a delicious treat! Whether you want them before you start your day or as dessert after dinner. They have more omega-3s than salmon. Full of fiber, in fact, most of the carbs they contain is fiber. Chia seeds are a good substitute to sports drinks, minus all the extra sugar.

Serves two or one if you eat as much as I do

Ingredients:

#1 Chocolate Chia pudding:

  • 4 Tbsp Chia seeds
  • 1.5 cups coconut milk (A little bit less if you like your pudding thick and not runny)
  • 1 Tbsp Raw cocoa powder
  • Liquid Stevia or sweetener of choice
  • 1/4 Tsp vanilla extract

#2 Dark Cherry Layer

  • 1 Cup of frozen dark cherries
  • 1 Very large frozen banana
  • 1 Cup coconut milk
  • 1 Tbsp açaí powder
  • 1 Tsp Pure Vanilla extract
  • Pinch of Saffron (considered the most expensive spice in the world! Due to the labor involved in producing it, so don't use a lot)

Directions:

Chia Pudding:

Place the chia seeds in a large mason jar or bowl, pour the milk and vanilla extract over and whisk, then add the cocoa powder and sweetener and whisk again until everything is well combined. If you have a mason jar with a tight lid, you can just cover and shake it instead of whisking.

When it's all well combined, cover and refrigerate overnight. The chia seeds will expand, making a delicious pudding.

Dark Cherry Layer:

Allow 10-20 minutes for the frozen fruit to thaw before blending. Add all the ingredients to a food processor or a blender and blend until it reaches the consistency you desire.

Layer the chia pudding at the bottom, then I added a layer of blueberries, then topped it with the cherry layer. On top; frozen cherry, raw cocoa nibs, and raw pepitas.
